Cournon

Deer

I was only a hundred yards from home when I saw the first deer.

A Stag and his mate casually crossed the road in front of me.

Then I saw a younger deer wander out of a neighbour’s garden, see me (what a shock that must have been), and scamper away.

A little further up the road, a pheasant came out of the undergrowth on one side of the road, strolled across the road and disappeared into the undergrowth there.

He did this over and over again, always a few yards ahead of me. Perhaps he realised the the stick I was carrying wasn’t a gun and that, as a result, I was no threat to him?

>Larch Bolets

Larch Bolets aren’t everyone’s idea of great mushrooms but they are edible and plentiful at this time of the year (the locals tend to leave them alone.)

I sometimes confuse them with Pepper Bolets. There may be a simpler way of telling the two apart but, a quick bite always works for me.

These are never going to rival Ceps in my affections but, they go well in a soup or, more commonly for me, chicken stew.

Bay Bolets

Although I found no Ceps, there were a few decent sized Bay Bolets about. Once again, not everyone’s idea of a great mushroom but I find them tasty and a useful addition to the basket. The secret is not to overcook them.

At about the halfway point on my walk I met an old boy who was on his way to take a look at his beehives. He inspected my basket and then told me that it had been too dry and that I should wait a bit longer.

Local knowledge is always the best.

Summing Up

Whilst not a wonderful start to the season, I did bring home the dinner!

I also saw some deer and a rather mad pheasant!

And I had a beautiful early morning walk in the beautiful Breton countryside. That’s something that should be available on prescription – it really does cure all almost everything!

And, with magnificent views like this, who could ask for more?

Ray Mears has travelled the world discovering how native people manage to live on just what nature provides. Whats always frustrated him is not knowing how our own ancestors fed themselves and what we could learn about our own diet. We know they were hunter-gatherers, but no-one has been able to tell what they ate day to day. How did they find their calories, week in week out throughout the year? In this book he travels back ten thousand years to a time before farming to learn how our ancestors found, prepared and cooked their food.

It would be our first time since we moved here two weeks ago.

Obviously, neither of us expected to find anything but, we took the basket just in case.

One of the nice things about living in Bains sur Oust is our proximity to the forest. Back at Les Croix, it used to take 40 mintues for me to walk into the forest. Now, don’t get me wrong, I used to enjoy the walk but… here I am just 3 minutes walk from the woods. I think that will mean many more mushrooming forays for me!

A walk around the block.

Maps

I’m going to have to get some maps drawn up so that I can record my little trips.

The surrounding area is half woodland and half open countryside as shown here.

The trees are also about half coniferous and half deciduous

We wandered down the lane trying to get our bearings. The thought at the forefront of my mind was… “What a great place this was going to be in the Autumn”

Nothing much about

I expected, there wasn’t much about; a few Russulas, quite a few Amanitas (see below – please!) and three rather manky bolets – two of which looked like Boletus Aestivalis, the other was almost certainly a Bay Bolet.

Although it seems a shame that we didn’t manage to put any mushrooms in the basket, three things keep the morning from being a failure…

1). The three bolets that were rather worse for wear would have been very edible just a couple of days ago! I think I just need to repeat this morning’s exercise a few more times and I’ll find something worth eating.

2). Now is a great time to explore the area prior to the frenzy of real mushrooming in a couple of months time. Without any expectations of filling the basket, I can look around and make mental notes about where to visit in September and October.

3). We have a glorious walk in the countryside! We were both surprised that what we had though to be an hour’s stroll turned out to be a walk nearly two and a half hours long.

Please Be Careful!

Be careful!

I have just read this very interesting article on the Cornell Mycology Blog site… I survived the Destroying Angel and would like to remind anyone who doesn’t already know it….

Every mushroom IS edible – it’s just that some WILL kill you!

So, please be so careful when out mushrooming. You only live once, you know!

And anyway, from the sounds of it, dying from Amanita poisoning doesn’t sound like an awful load of fun!

I went into the forest on foot and headed over to the South-East of the forest. I don’t know if they were out visiting or still in bed but, there was no sign of the family of deer

I wasn’t expecting to get many mushrooms as the Eastern side of the forest is not as productive as the Western side. It was, thus, a surprise to come across a Cep almost straight away – a good start!

I like the walk around the Eastern side of the forest; it gives me time to think and, if I get it right, I tend to pop out of the forest on the Western side near the village of Lanouee. Lanouee has 3 bars – it’s strange that I often end up there?

Another reason I like to start out on the Eastern side is that not many people go there. It is more difficult to access, there are less places to park – you have to be committed to go mushrooming there.

The solitude sometimes suits me; I love meeting people in the forest and chatting but sometimes, when I want to think, it’s good to be alone but doing something. Having just been offered a small property at a very low price, I have a lot of thinking to do. Perhaps my renting days are going to come to an end – does this mean I have to start being a grown-up?

So, I was lost in a world of my own when I finally noticed that it had started to rain. I headed into the interior of the forest to shelter. Here, the trees are mainly pine. According to the books, pine trees aren’t so good for Ceps. Guess what I found there! I guess the Ceps round here haven’t read those books.

It’s always such a joy to find nice mushrooms like these. You just know how good they are going to taste, how easy they are going to be to cook and what’s more, where you find one (or two in this case) you find others.

I found enough to fill another basket – just over a kilogram. These are going to be sliced and gently cooked in butter (with shallots and garlic) and then put into freezer boxes which will then be topped up with butter mixed with finely chopped Ceps. The frozen buttered Ceps will be the start of many a great sauce during the spring when there’s not much around in the forest.

As it is Sunday, of course, I got lost again! It wasn’t too bad this time as, although I didn’t know where I was – I knew where I wasn’t! Getting lost meant that I didn’t make it to the bar but did get home in time for Desert Island Disks – oh, it’s sad being an expat, isn’t it!

During the three quarters of an hour or so that I spent finding my way back to the main road (from where I could take a bearing) I did manage to find another 2 kilograms of assorted Bolets (not Ceps but nearly as good).

Some of these will be eaten with fresh local eggs for breakfast (what a naughty breakfast!) and the rest will also end up in a chicken and mushroom stew which will be portioned up and put into the freezer so that I can enjoy them throughout the year. I would give more of the mushrooms to Madam (my landlady) but, when I offered yesterday, she let on that she hadn’t finished last year’s!

Mental note: Need to find new freezer (industrial model) and other mushroom recipients.

I am starting work at 10am next week – thus I will be able to pop into the forest for an hour or so every morning.

This means that I’ll be starting work nice and calm and relaxed, and ready for anything that might come my way. I’ll also have something to talk to my colleagues about. They’ll know better than me, of course. They always do! And, as soon as I mention how I’m going to cook my mushrooms, I’ll be treated to hoots of derision – everyone here has their own recipes, handed down from one generation to another – and, for them, it’s almost an offence to vary from them. I’m pretty sure that I know what we’ll be talking about at lunchbreak for the next few days!

Any little Ceps (like the little one in the centre of the picture to the left) that I may find will be stored in jars filled with flavoured olive oil (another story, another website). What could be better as a Christmas present than a litre jar of perfectly preserved baby Ceps – not a lot, apart from a giftwrapped Kylie Minogue, that is!

I have just found a small electric mushroom dryer for sale for 40 Euros – I am just so tempted!

I have been doing a lot of thinking about some of the kind emails that I have received over the last week or so. I didn’t realise so many people were visiting this site until I looked at the webserver log files. Not just French and British visitors but one from Australia and another from New York! I guess I’ll have to keep on my toes ensuring that the site gets updated regularly. I was especially happy to hear from Joe that MushroomDiary.com is the site of the month on her husband Dave’s own website Les Bocages and also mentioned on her own site Wicklow Wench, Abroad. Many thanks. Both sites are well worth a look (or two) and anyone who calls their children Crash, Bang & Wallop has got to be worthy of respect.

Over the next week I shall be getting the maps of the forest onto the site (with my standard routes) and getting the link page sorted. I am waiting from a response from MycoWeb (a department of the University of Stockholm) to see if I can put their database of pictures onto MushroomDiary.com – according to their website, they have no problem with sharing the data but I’d rather hear it from the horses mouth first.

So, off to have a little nap (oh, these early mornings – and then walking 10kms yesterday & 25kms today – must be getting old!), the cats are waiting for me on the bed – and then, refreshed, I’ll pop out and take a look at those Chestnut trees.

We know they were hunter-gatherers, but no-one has been able to tell what they ate day to day. How did they find their calories, week in week out throughout the year? In this book he travels back ten thousand years to a time before farming to learn how our ancestors found, prepared and cooked their food.

I’ve been looking forward to this so much that I woke up every hour, on the hour, though the night.

It was worth the effort as 3 hours wandering round the North of the forest yielded just over 3 kilos of mixed mushrooms. I put about a kilogram of the best, the Ceps, in a basket for Madam (my landlady) and shall be using some of the rest in a sort of slow cooked risotto that I discovered by accident and then found out that the author (and foodie), Julian Barnes has discovered the same thing himself.

A slight, intermittent drizzle slightly spoilt the morning but, it probably kept some of the other mushroomers away. The few people that I met all agreed that it is still too early and another two weeks are needed. This will bring us up to the next full moon. I’m not sure why but this seems to be very important.

As the mushrooms got wet, I had to dry them. You really shouldn’t wash mushrooms and if they do get wet, they need to dry naturally and slowly.

I packed it in early as I was getting wet but did pop across the road (I promise the maps will be online this week – If only I can get my scanner to work!) to look at a field that a neighbour told me could be good (if only because no-one else goes there). I didn’t spend too much time but did find one Cep on the edge of the field. Not a particually good photo but I was in a hurry as it had started to rain quite hard.

I shall be going into the forest on foot tomorrow; starting in the South-East corner, hopefully saying hello to the family of deer that live there and then working my way round the Eastern edge of the forest. This will bring me out at the North of the forest at the same field. I intend to spend some time there having a good look around.

One of the difficult things about mushrooming is that the really good places for mushrooms are well known and well visited. One has to find the other places that, whilst maybe not so prolific, are less well known. These we call our Petits Coins and whilst I may mention some of them on ths site, be aware, I shalln’t tell you about all of them!

Just to prove that it’s not all Ceps, Ceps & Ceps (as it is for most of my neighbours and friends), I did pick a few other mushrooms. Not too many as that is what I shall be doing tomorrow.

However, the mushrooms in the photo (once again, not a good photo) are……

One small Beefsteak Fungus (Fistulina Hepatica). Excellent eating (especially young) – cook as you would a steak but you may have to soak in milk for a couple of hours first (it sometimes has a slightly metallic taste). I only pick the young ones and soak/marinate in red wine – but that’s just me!

Two small Girolles (Cantharellus Cibarius). Always good to find; there haven’t been many about this year (at least in the Forest of Lanouee) so any are a bonus.

Five Amerthyst Deceivers (Laccaria Amethystea). These should start to become more common now, they dry very well, are nice and tasty (you do need a lot of them) and add a bit of colour to the plate. One of my Gourmet mushroom meals (not really gourmet meal at all!) is Girolles, Amerthyst Deceivers and Pied Bleus (a blue winter mushroom) served on a bed of rice with a bit of salad on the side. It looks as good as it tastes and, the taste… “Magnifique est trop petit un mot!”

So, overall, a good morning (even if I did get a bit wet). I am looking forward to tomorrow as it will be a lovely walk (I may get to see the deer) and I shall be concentrating on a wider variety of mushrooms. And who knows, if I get it right, I may get lost enough to exit the forest just North of the village of Lanouee which, of course, has a bar (3 , in fact). It’s strange how that often happens!

Waking up at 9:30am doesn’t help your chances!

So, instead of finding this parking area clear (as I would usually expect), as you can see, my car (the white van) is at the back of the queue.

And I was also at the back of the queue, in terms of mushrooms. This part of the forest (right at the north) is very popular in the Autumn and usually yields good results. Perhaps it had today for those early birds but not for me.

The only thing I found was some cauliflower fungus (Sparassis Crispa) – which I happen to like a lot. It’s a useful mushroom to have in the kitchen and it keeps quite well. The only problem is that it often has additional nutritional value. The best way to get rid of any creepy-crawlies that are hiding within is to cut it into strips or slices and spray it with a light vinaigrette.

As there seemed to be no point in going to the well know, usual Cep hotspots, I started wandering off in a different direction. Ten minutes later I was lost. Not just vaguely lost but completely and utterly confused type lost. I knew that if I headed to the East I would eventually hit the main road but, the more I tried to head in that direction, the thicker the undergrowth became. I eventually found the edge of the forest (much further North than I should have been) and skulked along the edge of it until I came back to the road, and thus to where the car was parked.

As if this total failure wasn’t enough, I found that someone had had some trouble reversing as Bessie (the car) now sported a dent in her driver side wing and an unattached bumper! An emergency repair with some string that I carry around with me when I’m mushrooming (I knew it would come in handy, one day) got me home.

I decided to give up on mushrooming for the rest of the day and open a beer instead!

It gets worse? – Sunday 24th September

On the Sunday I decided to try the South-West of the forest. This is not so good for mushrooms but is a lovely walk. Once again I got lost. It was totally my fault! When I leave the path, I normally make a note in my notebook, where I was when I entered the interior of the forest and what direction the path was running in (so that I know which direction to go in to get back to where I was).

Needless to say, I didn’t and after twenty minutes of going round in circles, had to admit that I was lost. It is very tempting to think that you know where you are and to assume that going in one direction or the other is the right thing to do but, my feeling is that it is best to get to a known landmark from where you can make a real decision as to your future route. As I could hear the occasional car in the distance, I headed to what I correctly assumed was a road. There was a signpost, it pointed to Lanouee in one direction and Josselin in the other. Now I knew where I had gone wrong (not for the first time) and vowed to avoid the West of the forest for a while (I am often lost in the West of the forest, I’m not sure why).

I had to smile when I came to a pretty cottage that I had seen for the first time about a year ago. “Oh, I’m not lost”, I thought to myself. “I’ve been here before.” That cheered me up until I realised that the last time that I had been there was the last time that I had been lost in that part of the forest!

The conclusion

So, all in all, not a particularly successful weekend’s mushrooming but never mind, I got some exercise and learnt a few lessons. And anyway, it wasn’t a total washout.

The mixed basket of mushrooms that resulted from the wasted weekend provided me with a naughty omelette this morning with plenty left over for my Chinese style stir fry tonight. And, as I told my colleagues at work, one of the joys of running a cheap, old car is that it doesn’t really matter if she gets a dent or two!

This week I shall be only doing my normal 35 hours so I should be more able to get up on time for the weekend’s excitement. On Saturday, I intend to walk into the North of the forest (along the road, wearing my reflexive jacket) so that I don’t have to worry about getting back to the car – hopefully getting there at about 7am (before anyone else) – we’ll see! On Sunday, I intend to start on the Eastern side of the forest and work North, West and then South. This is one of my favourite walks. It comes in at about 30km and whilst it is not so great for mushrooming, there is a family of deer living in the South-East of the forest – now, a sighting of them is worth a Cep or two!.

As you can see from the photo on the left, there wasn’t much about and, what there was, wasn’t of particularly high quality (Click on the photo for a better view – don’t forget to use the Back button to return).

I drove in to the South-West side of the forest and left the car. There is a track along the Southern edge of the forest that has some special spots (petits coins in French) where I usually find the first Ceps of the year. Today, however, all was bare. I headed North until I hit the Les Forges road, then West towards Les Cinq Chemins. As I was shuffling along the side of the road, poking around in the ditch, a car pulled up… “Any luck?”, the driver asked.

“No”, I replied. “I think that it’s still too early.”

The driver agreed and, after he had wished me luck, drove off. Mushrooming is a very important business here and most people are interested in the annual arrivel of Les Ceps.

A few hundred metres along the road, I met a man coming towards me, also poking a stick into the ditch beside the road. He was wearing a pair of overalls and he explained that he works for a local garage and was just delivering a repaired car to the client when he thought he’d stop for 10 minutes to check for the early Ceps. It is quite acceptable (in this part of France) to keep a customer waiting for this reason.

He asked me where I was going and, when I told him, told me that he had taken 1kg of Ceps there, one morning, last October. He suggested that I look along the North side of the track. I thanked him and continued on my way.

Before long, I was at Les Cinq Chemins. This is where 5 tracks converge in the forest. There are a number of old buildings there which are used as a base for hunters meeting up for the ritual Sunday morning wildlife killing spree.

There, I met the guy who had earlier pulled over to ask me if I’d found anything. He was preparing the lodge for the next day. He introduced me to his friends and I spent a good twenty minutes talking about mushrooms, the weather and the world in general – it really is a very friendly place here. Refreshed by a cold beer that my new friends offered me, I continued on my way; knowing full well that I would be the topic of conversation in their local bar, once they had finished their day’s work.

Finally I got to one of my petits coins – one of those secret places that has never failed me – until today, that is. It was totally bare, not even any evidence that someone else had got there first. I turned round and headed back South, towards where I had left the car. I wasn’t too upset about not finding anything – after all, it is still a bit early in the year.

It was a bit of a suprise, then, to stumble across these two Orange Birch Boletes (Leccinum Versipelle) – these are know as Bolets Oranges locally. They weren’t in the best of condition but certainly edible. For an idea of the size, my mushrooming knife is 13cms long (including the brush).

Wow, I wouldn’t be going home with an empty basket.

Things were looking up and, as luck breeds luck I started finding some small (and not particularly wonderful) Field Mushrooms (Agaricus Campestris). As I continued back to the car, I was rewarded with the find of a large Bay Bolete (Boletus Badius) – to get a better idea of the size, the cap measured 19cm across. So, now, with a slightly heavy basket I made my way back to the car – after all, every Saturday morning, there is a market in Josselin. Although I didn’t need to buy anything, I knew that I would meet my work colleagues there and couldn’t wait to pass on the news.

Just before I got to the car, I met a couple taking their daughter out for a walk in the forest. “Mummy, look at those mushrooms”, she cried out. “Can we pick mushrooms, as well?”

I spoke to the couple (and their daughter) for about 10 minutes. I got the feeling that I may well meet them again – next time, carrying baskets and rooting around in the undergrowth – I hope so!

All in all, a great two hours in the forest. I had found some mushrooms, had some exercise, met some people and made new friends – and to think that I had sworn at the alarm clock when it went off at 6am!

Back home, the field mushrooms went into a small basket which I then put into the fridge (the only way of keeping, less than wonderfull, field mushrooms fresh) and the bolets went in a dark cupboard. I will eat the field mushrooms for my Sunday breakfast with little strips of pork belly, cooked in butter with shallots. The mushrooms go in at the last moment – they don’t need much cooking. The bolets will be cleaned and sliced and added to a chicken fricasse that I am planning for Sunday night. Once again, the mushrooms go in towards the end of the cooking process -they need time to give up some flavour to the sauce but, they also need to retain some firmness.

My next mushrooming trip will be Sunday 3rd September – although, as I am on the late shift this week (and thus starting work at 10am), I might be able to get a couple of quick trips in before then – I’ll let you know how I get on.
